CHRISTMAS FOOD IDEAS

One of the best things about Christmas is all the amazing food you can enjoy and not worry about the calories because the diets always start January 1st! Whether you’re a sweet or savoury person there is always enough options to fill that craving when it comes to Christmas food. We have found some of the most amazing recipes that will make your mouth water this Christmas.

GLAZED SPIRAL HAM

Ingredients

  • 1 whole cured, smoked, bone-in ham
  • 1/2 cup apricot jam
  • 1/4 cup light brown sugar
  • 2 tbsp bourbon (optional)
  • 1 tbsp Dijon mustard
  • 1/2 tsp crushed red pepper flakes

Directions

  1. Remove ham from refrigerator and let sit at room temperature for 1 hour.
  2. Preheat oven to 350°. Place a rack in a large roasting pan and cover the rack with foil. Pour 2 cups water in the bottom of roasting pan and place ham on the foil on the rack.
  3. In a small bowl, stir together jam, brown sugar, bourbon, Dijon, and red pepper flakes. Brush ham with some of the glaze and roast, basting with more glaze every 30 minutes, until an instant-read thermometer inserted in the thickest part reads 140°, about 1 ½ to 2 hours.
  4. Let rest 15 minutes before carving.

PORK LOIN ROAST

Ingredients

  • 3 lb boneless pork loin, well trimmed
  • 3 cloves garlic, minced
  • 2 tbsp grainy mustard
  • 1 tbsp chopped rosemary
  • 1 tsp chopped thyme leaves
  • 1 1/2 tsp salt & black pepper
  • Fresh rosemary sprigs
  • 3 tbsp melted butter
  • 1 tbsp brown sugar

Directions

  1. Preheat oven to 400°. Line a 13"-x-9” pan with foil and place a wire rack on top.
  2. Roll the flap of the boneless loin into a cylinder and using kitchen twine, tie the pork loin every few inches. (This helps cook the pork more evenly.)
  3. In a small bowl, mix together garlic, mustard, rosemary, thyme, 1 1/2 teaspoons salt, and freshly ground black pepper. Rub mixture all over pork loin and place in roasting pan fat-side down. Bake for 30 minutes, then carefully flip the loin and bake until a thermometer inserted into the middle of the meat reads 145°, about 20 minutes.
  4. Mix melted butter and brown sugar together, then brush on top of the pork loin. Broil for 2 minutes to let caramelize.
  5. Let rest for 10 minutes before slicing into 1/3” pieces. Serve pork warm with extra pan juices.

ROASTED POTATOES

Ingredients

  • 4 lb baby potatoes, halved
  • 3 tbsp canola oil
  • 12 large cloves garlic, crushed
  • 1 tbsp freshly chopped thyme
  • 2 tsp kosher salt
  • 3/4 tsp freshly ground black pepper

Directions

  1. Arrange racks in upper and lower thirds of oven and preheat to 450°.
  2. Toss potatoes with oil, garlic, thyme, salt and pepper in a large bowl until coated.
  3. Arrange in an even layer, cut side down, on two rimmed baking sheets.
  4. Roast potatoes, rotating sheets front to back and top to bottom halfway through, until crisp and golden brown on the bottom, 25 to 30 minutes.

ROASTED VEGETABLES

Ingredients

  • 3/4 lb Brussels sprouts, trimmed and halved
  • 2 large carrots, peeled and sliced into 1/2” pieces
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp chopped rosemary leaves
  • 1 tsp chopped thyme leaves
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup toasted pecans
  • 1/2 cup dried cranberries

Directions

  1. Preheat oven to 400°.
  2. Scatter vegetables on a large baking sheet. Toss with oil, balsamic vinegar, rosemary, and thyme. Season with salt and pepper.
  3. Bake for 20 to 25 minutes, until the vegetables are tender, shaking the pan halfway through.
  4. Before serving, toss roasted vegetables with pecans and cranberries.

CHEESY CAULIFLOWER BAKE

  • 1 1/2 large heads cauliflower
  • 6 tbsp butter, plus more for buttering dish
  • 1/2 cup heavy cream
  • 6 tbsp butter
  • 3 cloves garlic, minced
  • 2 cups grated white cheddar
  • 1 cup freshly grated Parmesan
  • 1 tbsp fresh thyme leaves
  • Salt to taste
  • Black pepper to taste

Directions

  1. Preheat oven to 400º. In a large pot of salted boiling water, cook cauliflower until tender, 8 minutes. Drain well.
  2. Butter a large baking dish. Add half the cauliflower and pour over half the heavy cream. Dot with half the butter, sprinkle with half the garlic, cheddar, Parmesan, and thyme. Repeat with remaining ingredients and season with salt and pepper.
  3. Bake until cheese is melty and deeply golden, 30 minutes.
  4. Let cool 5 minutes, then serve.

PULL APART CHRISTMAS TREE

  • 1 lb refrigerated pizza dough
  • Egg wash (1 egg whisked with 1 tbsp water)
  • 7 mozzarella sticks
  • 1/4 cup melted butter
  • 1/2 cup finely grated Parmesan
  • 1 tbsp Thinly sliced basil
  • 1 tbsp chopped parsley
  • 1 tbsp chopped rosemary
  • Marinara, warmed (for serving)

Directions

  1. Preheat oven to 450°. Line a large baking sheet with parchment paper. Cut mozzarella sticks into 1” pieces and set aside.
  2. On a floured surface, divide pizza dough into two pieces. Stretch and roll each piece of dough into a long rectangle, then cut dough into 2” squares (you’ll need 33 total).
  3. Wrap a dough square around each piece of mozzarella, forming a tightly sealed ball. Place balls seam-side down on the baking sheet in the shape of a Christmas tree (they should be touching). Brush egg wash on dough balls and bake until golden, 15 to 20 minutes.
  4. Meanwhile, whisk together melted butter, Parmesan and herbs. Brush on baked pizza balls. Serve warm with marinara for dipping.

PECAN PIE CAKE

Ingredients

For Pecan Pie Topping

  • 3/4 Cup raw pecans
  • 2 tbsp butter
  • 6 tbsp granulated sugar
  • 2 tbsp honey

For Pound Cake

  • Cooking spray
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tsp pure vanilla extract
  • 2 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp kosher salt

Directions

  1. Preheat oven to 350° and grease a 9”x 5” loaf pan with cooking spray and line with parchment.
  2. Make pound cake: In a large bowl with a hand mixer, beat together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition then add vanilla.
  3. In a separate large bowl whisk together flour, baking powder, and salt. Add dry ingredients to wet ingredients and stir until just combined.  Pour batter into prepared loaf pan and smooth top with an offset.
  4. Make pecan topping: In a medium sauce pan over medium heat, cook pecans and butter together until nuts are lightly toasted, 2 minutes. Add sugar and honey and cook, stirring until sugar is dissolved and glaze starts to bubble, 2 to 3 minutes more.
  5. Spoon pecan topping in an even layer over the top of your pound cake. Bake for 1 hour, or until a toothpick inserted into the middle comes out clean. Let cool 10 minutes then invert onto a cooling rack to cool completely.
